Preheat the oven to 350 degrees F. Butter three 8-inch x 2-inch round cake pans. Line with wax paper, then butter (or cooking spray) and flour the pans.
Sift all of the dry ingredients together then mix with electric mixer on low until mixed well.
In a separate bowl, mix together all the wet ingredients except for the coffee.
With the mixer on low, slowly add the wet ingredients (all except the coffee) in to the dry ingredients and make sure to scrape the sides of the mixing bowl. Mix for about 1 minute.
With the mixer on low, slowly add the coffee and mix for about 30 seconds.
Evenly distribute the batter to the 3 pans (each pan should be filled a little over halfway.
Place on the middle rack and bake for 30-45 min. The cakes will be ready when a toothpick comes out clean.
Once the cakes are finished cooking, remove them from the pans and place on a cooling rack so that they can cool off. (about 30 min)
Time for the frosting! You will need to make 3-4 batches
In a saucepan over medium heat, melt the butter, and mix in 6 tablespoons milk, vanilla, and brown sugar. Boil vigorously for 1 minute and make sure to whisk it will it is boiling to make sure it does not scorch.
Remove from heat, and beat in 1 cup confectioners' sugar. Cool slightly, and beat in the vanilla and remaining 1 cup confectioners' sugar. Add more milk if the mixture is too thick.
Time to assemble the cake!
Place the first layer (make sure to remove the wax paper) on a cake dish then add a layer of the frosting on top. Next add the second cake layer then add another layer of frosting.
At this point you may need to make another batch of frosting.
From here just cover the entire cake with frosting. Make sure to work quickly because the frosting will harden and you will not be able to spread it
