Creole Chicken and Sausage Gumbo

An awesome Gumbo recipe that I grew up eating.
Ingredients
- 1 whole chicken, cut up
- 2 cups of diced sausage (smoked or andouille)
- 3 cups chicken broth or water
- 4 tablespoons butter (half stick)
- 1 large onion, diced
- 1 large green pepper, diced
- 1½ tablespoon of minced garlic
- 2 stalks celery, cut up
- 2 cups of sliced okra ( I use frozen okra)
- 1 can of stewed tomatos
- 2 Tablespoons Black Magic
- 2 tablespoons gumbo file
- ½ tablespoon Fire (optional)
Instructions
- In a large pot, on medium heat, saute the sausage, onions, green pepper, and garlic in the butter until the sausage begins to brown.
- Next add in all the other ingredients and bring to a boil then reduce to low heat.
- Let this simmer for about 2 hours, stirring every 30 minutes.
- Let it set for about 15 minutes after cooking.
- Serve with rice and or cornbread. Enjoy!
Notes
You can add shrimp or crabs/crab legs to this recipe but you would do this the last 5-7 minutes of cooking. Crab and shrimp does not take very long to cook so this is the reason why you add the last few minutes.
You can substitute olive oil for the butter to make the gumbo a little healthier.
