Bourbon Chicken

Great chicken recipe with a nice kick that is great over brown rice or mashed potatoes.
Ingredients
- 2 pound chicken leg or thigh meat, cut into bite-size chunks
- 4 ounces soy sauce
- ½ cup brown sugar
- 4 cloves of minced garlic
- 2 tablespoons of minced ginger
- ½ cup finely chopped yellow onions
- ¾ cup Jim Beam bourbon whiskey
- 2 tablespoons white wine
- 1 cup of sliced green onion/scallion
- 1 tablespoon Black Magic
- ½ teaspoon of Fire (to taste or can be omitted if you do not like spicy food)
Instructions
- Mix all the marinade ingredients and pour over chicken pieces in a bowl. Cover and refrigerate (stirring often) for several hours (best overnight).
- Poor all the contents of the bowl into the a large pot that is on medium/medium high heat.
- You will want the stir every 2-3 minutes until done, after about 20-25 minutes.
- Let it rest for about 5 minutes.
- When serving garnish with the green onion.
